The final step in the transformation of barley grown in Isle-sur-la-Sorgue for the production of our whisky: malting!
Essential and decisive for producing a quality single malt whisky, the malting stage has been entrusted to A VOS MALTS, a company labeled “Malt Artisanal”, a guarantee of quality for terroir whiskies.
Malting is a process that aims to germinate the cereal before drying it to allow the sugars to be extracted from the grains and proceed to the fermentation stage which takes place after brewing.
Working exclusively with organic and regional cereals, A VOS MALTS uses an innovative process with all-stainless steel equipment to guarantee consistent quality for the malts produced.
The custom malting will be carried out with a batch of 10T of raw barley harvested at Isle-sur-la-Sorgue to obtain approximately 8T of malt.
